Eating dinner with the whole family is such a crystal moment you can always share and enjoy together.  It gives a lot of joy and meaning specially for the little kids, that is why as much as we can we always eat together.  This recipe I’m going to share is not really my very own, so I am not claiming the ownership of this recipe. I got the tomato sauce recipe from one of the Baked Tilapia recipes in http://www.allrecipes.com. The first time I used the recipe, my husband loved it and I myself got surprise the way it tasted. I never thought it will be such a big hit to my husband and thought it’s just one of my disastrous cookings. I still remember the first time, ohh so yummmmy, specially eating with rice, just a perfect dinner meal!

Anyway, back about the recipe, as I said it’s not my very own, just made some changes or adjustments according to my cooking experimentation experience.

Here it is:


1 cup extra virgin olive oil 1/2 tsp dried Basil leaves
1 can ( oz) tomato paste 3 (1 pound) Mahi Mahi Fillets
1 tsp garlic powder 1 tomato fresh, sliced
1 tsp dried oregano 1 large Onion, sliced
1/2 tsp salt (or according to taste) 1 green bell pepper, thinly sliced
1/2 tsp ground black pepper 3 tbsp butter
1/2 tsp dried Parsley


1. Preheat oven to 350 degrees F (175 degrees C). Coat bottom of a medium baking dish with about 1/2 cup olive oil.

2. In a small bowl, blend remaining olive oil, tomato paste, garlic powder, oregano, salt, ground black pepper, parsley and basil.

3. Arrange Mahi Mahi fillets in the prepared baking dish, skin side up. With spatula or spoon, spread the olive oil and tomato paste mixture over the Mahi Mahi fillets, heaping the
majority in the centers of the fillets. Arrange onion and green pepper slices on and around the fillets.

4. Bake in the preheated oven 30 minutes, until fish is easily flaked with a fork. Remove from
heat, arrange the tomato fresh slices on top and around each fillet then top with 1
tablespoon butter on the center of the fillet and set oven to broil. Broil 8 to 10 minutes,
until butter is melted and lightly brown.

* I also use this for chicken breast fillet and just adjust the time in baking.
